Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 9-inch square baking pan.
  2. In a medium bowl, combine 1 cup of gluten-free flour and powdered sugar. Cut in the softened butter and mix in the vanilla extract until the dough comes together.
  3. Press the dough evenly into the bottom of the prepared baking pan. Bake for 20 minutes or until lightly golden.
  4. While the crust is baking, prepare the lemon filling. In a separate bowl, beat the eggs and granulated sugar until smooth.
  5. Stir in the 2 tablespoons of gluten-free flour, baking powder, lemon juice, and lemon zest until well combined.
  6. Pour the lemon filling over the hot crust. Return the pan to the oven and bake for an additional 20-25 minutes, or until the filling is set and the edges are lightly browned.
  7. Allow the bars to cool completely in the pan on a wire rack. Once cooled, dust with additional powdered sugar, cut into squares, and serve.
